What's Cooking April 2022

April is zipping along. I have been cooking as usual, working more than usual. Forgetting to take pictures again.


Good food but no pictures:

  • Easy Fish Curry with Coconut Very good and pretty easy. I did not have fresh coconut but used unsweetened that I had in the freezer. Served it with basmati rice and broccoli.

  • Ground Beef Gnocchi Very easy, used some of my ground beef bundle purchase. I am fortunate to be able to buy in bulk when things are on sale. And use the freezer. One pan meal, great with a salad, leftovers perfect for brunch.

  • Pork Piccata Based on the recipe but used regular flour not almond. The first time I made it I used the almond but it was a little grainy. Served with potatoes, asparagus. Asparagus is in season and well priced. Pork tenderloin, not pork loin.

  • I needed biscuits and gravy and needed dinner one night, so breakfast for dinner. I did not use a recipe for the sausage gravy but this is very close to what I do. Also scrambled eggs. And biscuits for breakfast the next day! I got 7 biscuits using a 3 inch cutter.

  • Crispy Cheesy Pan Pizza has been on the list for a week but I just could not start the dough. Finally got it together and was so glad. I did not feel like meat, husband wanted it, half and half. The pizza does come easily out of the pan. Arugula salad as a side.


This is very light and fluffy pizza.


Work is picking up. I had cooking class with 14 year old G on April 1st but no pranks. We made bagels, roasted a chicken, made a sheet pan dinner and some soup. Whew! She did great. I did not take pictures, we were busy. Mom snapped some, face blurred for privacy!

I had a demo for KitchenAid for the first time in a long time. I used the espresso machine, burr grinder and frother. I practiced the day before the demo and managed to grind coffee with no container under to catch it. Yes, needed practice. Did not do that during the demo.


My birds keep coming! So many - bluebirds, gold finches, thrashers, woodpeckers, robins, doves. Another hummingbird too. The cats love watching the doves on the deck. Squirrels don't seem interesting at all. Doves often seem to have no idea how they got where they landed. These two were in the smallest bird bath, bigger one available. Snapped on the way to the demo, thru the glass door.

Lots going on. Trying to keep balance, did not take all available demo dates, fortunate to be able to say no. I want to keep liking what I do!
