Pizza Saturday, Worth the Wait

The pot roast on Friday was excellent since I had to wait for pizza dough but pizza Saturday was worth the wait!
About 7 am Saturday, I formed the dough into balls and put them in the fridge. I made 4 as per the recipe. I took them out about 3 and left them at room temp until 6.
When I got the dough out, I cooked three strips of bacon, sautéed a large package of spinach, made the béchamel and grated parmesan.
When it was time to cook, I made one pizza exactly like the recipe. And husband and I split it and loved it. And forgot to eat salad with it.

Since the pizzas cooked so quickly, I made a second one and added bacon and spinach. Oh my goodness again. And we remembered to have salad too.

The two remaining pieces of dough went into the fridge and I hoped they stayed good.
Sunday was a work day. A bridal event for KitchenAid and there were a few new sales associates so I could do some training too. And listened into the end of a staff meeting and heard that it was time for Christmas. Too soon for my brain!
Spent the rest of the day doing my crosswords, reading, a little knitting. Good day
Dinner Sunday night was easy because I could feel myself hitting the wall of not wanting to cook. I had a bundle of asparagus still in the fridge, so I made steaks with asparagus risotto from Simply Recipes.

Monday morning breakfast pizza. The dough was still great! I had some bacon and spinach left and sauce so two pizzas with eggs on top. Delicious! Still more sauce so that went onto the freezer.

And then Monday was organizing materials for my Thursday cooking class. This is part of a three week session, school was on fall break last week. I am a list maker! Organized the recipes, made an equipment list and a grocery list. This week we'll be making soups. I really enjoy teaching.
Really, really easy dinner. I took the leftover mashed potatoes and the leftover pot roast out of the fridge. Took the silicone lids off of the glass containers, covered them with foil and popped them in the oven. Barely any dishes, very great dinner.
Grocery shopping Tuesday since the plan was Arepa Mia before worship.
