Biscuit Brunch
I have not been in a brunch making mood lately but Thursday morning felt the need for biscuits. I had pinned a recipe for Masa Harina Biscuits so that was on my mind. My mind did not stop there.
I felt eggs would be nice with the biscuits. So far, not bad. But then I had a vision. A vision of biscuits and gravy. No meat. I didn't measure everything but this is very close to what I did.
Green Chile Gravy
2 tablespoons butter
1/2 cup onion, diced
1 cup chopped green chiles
1 clove garlic, minced
2 tablespoons flour
1 cup milk
1 cup sharp cheddar cheese, grated, not packed
salt and pepper
Melt the butter in a saucepan over medium heat and sauté the onion with a pinch of salt until tender. Add the chiles and garlic and heat a minute or two.
Whisk in the flour and cook for a minute or so to get raw flour taste out.
Whisk in the milk and stir over medium heat until thickened. Lower heat and add cheese to melt. Add pepper to taste. Keep warm. If too thick add a little milk.
While the biscuits baked, the gravy stayed warm and once the biscuits were done, I made over easy eggs.
Split the biscuit, topped with an egg, spooned on gravy. Oh so good!
Of course you could just have warm biscuits with butter and honey.
