Still Trying

Another week, still trying to get back to a normal schedule. I’m beginning to think that that might not happen this year. 

I didn’t realize it was Friday until very late in the day last week. Saturday I was off which is odd because I often have KitchenAid work. I decided to cook a nice dinner but it felt like Sunday dinner. 

I made Pork Loin with Wine and Herb Gravy, Mashed Potatoes and Green Beans. Very good. Leftovers! 

Sunday we decided to go out for breakfast but by the time we got out of the house, it was 11:00. We decided to go to Buford Highway and get noodles. And scallion pancakes and soup dumplings. Sharing is important.

We then took our grocery list and shopped for groceries. I know you are not supposed to shop when hungry, but is also difficult when full. I kept thinking, we don’t need potatoes, I’m not hungry.

Dinner was roast chicken, roasted fingerlings and sautéed spinach. I bought potatoes. 

Menu Plan

Since I’m still trying to get to a normal schedule, I remembered to set my alarm so I could  go to my customer’s house to cook. Personal chef Monday. 

I did not incinerate any of the food this week. Yay me! I made salmon cakes (a favorite), roasted vegetablessheet pan mongolian beef, and chicken salad

Leftover Monday at our house with the choice of chicken, pork roast, mashed potatoes and anything else that looked good. I know I’ve said this before but I love leftovers. And plan for them. 

According to my husband, we had a fancy dinner Tuesday night. I had a little extra time to cook, but didn’t think it was fancy. I used a lot of things that I had in the house. 

I made Grapefruit and Pistachio Crusted Salmon using salmon from the freezer, grapefruit in the fridge, pistachios I keep for snacks from Costco. With that we had Baked Lemon Spinach Risotto because when I recently read the blog, it looked delicious. 

I made a few changes to the risotto. In my mind, there was no need to bake in a casserole dish, just used the pan used for sautéing the onions. I had fresh spinach so added that with the rice to wilt down. The risotto was delicious! Salmon too.

Wednesday was rainy, cold and grey. I worked on my knitting a little. The afghan is starting to come together. 

Dinner was leftover risotto and salmon for me and even enough for husband before his meeting. Easy, easy day off. 

Meeting New People

Thursday I met a new friend. Her name is Amanda Cushman, she lives in North Carolina, teaches cooking classes and was in Atlanta to teach. We’ve talked on the phone once, we’re Facebook friends and we both are members of IACP. I picked her up at Marta, we went to lunch to have pho and talked for a long time. So nice to meet people in real life. 

Of course a late lunch meant no dinner, especially chicken parmesan pasta. Luckily husband also met a friend for lunch so we were both set.  Pasta gets moved to Friday since I started thawing the chicken. All will be well. 

I mentioned to Amanda that the last time she was in Atlanta there was a hurricane and this time there is supposed to be snow. Coincidence?
