On to February Cooking!

January flew by and I had a great month. I did some cooking for myself, some cooking for demos, some for customers, some for kids. All good. 

Not exactly a complaint, but it has not been cold so far this winter. I have the sliding glass door open today and the windows so it's not exactly warm, comfort food weather. We don't have any ice storms either though so it all balances out. There is still time for cold weather to come.

I decided to try to keep learning about quilting so I started an online class through Craftsy. So far, so good. I signed up for the block of the month club and I finished the January blocks in January! Very exciting. I watched the video for the February blocks yesterday.

I like the online class because I can stop, start, go back, over and over. I like to get an overview first and then start when I have time and don't have to do anything else. Tomorrow I start cutting, sewing and pressing. The blocks look much harder this month so we'll see. I'm trying to ignore the extra pressure of a short month.

I cooked for two new clients this week. One woman just had surgery for cancer and started chemo last week. She wants to eat well to take care of herself. She is very nice and I had a great time cooking Wednesday and talking with her. I also got to meet her husband and daughter. 

Thursday I cooked for a busy family. They need to eat healthy food but are busy with a 6 and 9 year old. Last night they got to sit down to Pork Fajitas with Mango and Yellow Rice,Black Beans and Corn. 

Looking forward to a wonderful February, can't wait to see what this month brings. 

Back to the Real World

Once in Cambridge for the conference, we went on the tour of the North End. Then I got immersed in the conference. 

The general session on Sunday morning featured an interview of Barbara Haber who brought "books and cooks to the Schlesinger Library" according to the Harvard Gazette in 2003. She talked about how women's history could be studied using cookbooks to see what was being cooked, what the trends were, why some recipes were created. A fascinating talk that was a good kickoff. 

After that I went to Cheese, Glorious Cheese where I learned about cheese, pairing it with food, pairing it with drinks, and having a good time while learning. Of course there was tasting too.  





After my cheese class I went over to the vendor fair and talked with the sponsors, had lunch and met up with old friends and new.  The Idaho Potato Commission was there.

On Sunday in addition to attending classes, I was the presenter for a class to let others know how to get involved with Chefs Move to Schools.  I was on a panel with Monica Thomas, Annmarie Chelius and her daughter Victoria. There was a lot of interest and energy from the attendees. 





Of course there was a reception and awards gala Sunday night. Of course it was wonderful and delicious.  And fun!





Monday morning the general session was about story telling with Lydia Shire, Susan Samson, Barbara Lynch. Fascinating! I then went to a class about New England Seafood, learned about the history, the sustainability, and yes had a taste. And conference was over for another year. Next year Chicago!

We left Cambridge Tuesday morning headed to Doyleston, PA and the Moravian Tile works.  We toured the home and now museum of Henry Chapman Mercer. He built a concrete castle and decorated it with his tiles. It is so interesting and there is so much to see. 





While at the castle we learned about the tool museum Henry had also created so decided to stay and see that the next day. All I can say is go.  Tools are arranged by use - glass blowing, medicine, woodworking, cooking, fishing, etc. It is huge and there are items (tools) hanging in the common area - a conestoga wagon, a sleigh, a stagecoach, cider presses, so much more.

And we got home Thursday for dinner.  Angel hair with meat sauce from the freezer. Now it's back to the real world and back to work. I'm ready though. I had a great vacation!

Vacation First Half

We just got home from vacation yesterday. We have been away since October 29 and we traveled 2600 miles. We drove, yes drove and had a fantastic time. We decided to take the time because we hadn't had a long break in a long time. In the middle of vacation I attended a conference and then we finished vacation.

We planned the trip using the AAA website and I highly recommend it. We made plans but left the schedule open to be able to stop whenever we wanted. 

Our first stop was lunch in Charlotte followed by a visit to the Carolina Raptor Center. We spent a couple hours walking through the wooded paths viewing the rescued birds and learning about raptors. This was a great stop.

We slept in the Durham area and headed to Virginia Beach the next day. We spent the evening walking on the beach probably too far but it was wonderful.



We also went to the Virginia Aquarium and Marine Science Center. More walking and viewing the fish and then a nice stroll outside through the marsh. We walk a lot when we relax.





After leaving the aquarium we headed to Chincoteague where we hoped to see the ponies. No luck on the ponies but we had a good hike.


We headed to Lewes, Delaware to get some rest and be ready to take the ferry to Cape May the next day.  We had been a little concerned about the weather because of the freak snow storm but we had gorgeous weather. 







We loved Cape May. We did some shopping, some touring and looked at wonderful houses. 







After Cape May we were off to Mystic, CT and another wonderful day. It was so wonderful we decided to stay another day. We did some shopping, toured Mystic Seaport and had great seafood. I love oysters!











With one day before my conference started, we were off the Londonderry, New Hampshire to visit my friend Patti. We visited in her kitchen where she served minestrone and grilled cheese/proscuitto sandwiches. She is a personal chef also. What a wonderful visit before heading to Cambridge, MA. 

Take some time and take a break. It doesn't have to be for 2 weeks and 2600 miles, but you do need to relax and renew.

Vacation Weekend!

Well not really. I had a great week of cooking this week. I cooked for a long time customer on Wednesday and a fairly new customer on Thursday. No one was home on Wednesday except Lucky the dog who decided that she'd sun some once she knew I'd let her back in the house. 

Thursday no one was home when I arrived but Bob did get home right before I left. Once home we finally planted our tomatoes and herbs. I was beginning to think that we would have no tomatoes this year. I hope we get tons! 

I had nothing planned for Friday so told my husband I would be on vacation. That lasted until about 7:30 am when he saw me putting laundry in the washing machine and asked about vacation. I had things to do! After getting laundry in I cleaned a little, went to the bank, the library, and home again maybe to vacation. 

First menu planning for us then a short vacation of reading and some knitting before dinner and a little more reading. Better than no vacation at all. 

This morning I went to Jazzercise at 7:15 and came home to do more laundry and cleaning. I don't like to do too much cleaning at once!  Now relaxing until this afternoon when I get ready for an in-home cooking class with a new customer. He needs to learn some recipes that are more diabetic friendly to fit in with his new eating requirements.  

Tomorrow is a tour of a goat farm.  I will bring my camera and hopefully remember to use it. Enjoy the weekend and take some time to vacation. 

Saturday Night Meal - Abbatoir

I wasn't finished with the blog last night but needed to get some sleep so I could be fresh for today, our last cooking club of the school year. We're making some fresh fruit sorbet, cookies and have some end of club gifts to give out.  Fun!

Back to last weekend. In addition to working at the cooking show I had the opportunity to have a fantastic meal at Abbatoir. I am a member of Women Chefs and Restaurateurs (WCR) and the monthly board meeting was in Atlanta. I'm not a member of the board, but after the board meeting we had a get together with the board for some networking and food.  Anne Quatrano hosted us, she is also a member of WCR and put together quite a meal for us. 

Starters:

  • house prepared selection of charcuterie
  • bread and butter pickled shrimp
Entrees:
  • roasted chicken roulade
  • stuffed lamb leg
  • whole grilled american red snapper
Locally Grown Vegetables:

  • creamy yellow grits
  • fresh young butter beans
Dessert:
  • several - chocolate chess pie, pineapple samosa, flan, cookie, a few more that I forget
Everything was delicious and I snapped a few pictures but was busy eating and talking to everyone so didn't get everything.  You can just go and order and enjoy the menu on your own. 







I have my paperwork done for tomorrow's customer, my blog finished, now on to getting ready to go to school this afternoon. 

Texas Chef Weekend

I've had a weekend away planned for a while and I wasn't sure I'd get to go with the eye surgery, but the doctor said "go" and off I went.  

I left for Houston on Thursday with friends Rosemary and Lana.  We arrived in Houston about 3:30 and met up with Patti from New Hampshire and Charity from California.  Lana picked up the car and off we went to Sharon's house in The Woodlands.  We greeted the others from all over - Mia from Toronto, Sandy from near Dallas, Donna from Austin, Diane from College Station, Cathy from Lufkin, Sherry from the neighborhood, altogther about 20 woman ready to eat, cook and shop.

Thursday night was dinner courtesy of Sharon contributing Tortilla Soup.  Julie brought almond toffee, key lime parfait, we had chips, guacamole, wine and beer.  Lots of food, lots of fun.  We ate, talked, met new friends, relaxed together. 



We had several people who had volunteered to be drivers for our weekend so we all chose a driver and went to bed to get ready for shopping Saturday.  

Friday morning started with Carne Asada tortillas and Chile Relleno Casserole, several kinds of jam and a couple kinds of breads.  So very good!  Donna made the carne asada and Cathy the casserole, or Julie, not sure but all was delicious.  We got into our cars and off we went. 

First stop Sur la Table. I think we had 14 in the group.  From there we headed to two different grocery stores and then I think it was home to get ready for pizza night. Don't worry, we had lunch at the second grocery store.  We are good about eating! 



Patti and Diane made pizza dough for pizza night.  The rest of us were responsible for salad stuff and pizza toppings.  Yes, 18 chefs, pizza and toppings.  The sky is the limit! 





We had cheeses, vegetables, meats, sauces, about anything you might have wanted on a pizza was there.  Another wonderful evening with friends.  

Of course we needed more dessert so Julie brought forth a Dulce de Leche cake, still had almond toffee and lime parfait, Diane had truffles for us, Patti had two kinds of homemade caramels and Rosemary had chocolate cake with chocolate ganache.  Remember 20 chefs in one place! 

Saturday started a little earlier and we had no time to eat at Sharon's before heading out in our designated cars.  My awesome driver was Diane.  Our first stop about 11:00 am was Goode Company Texas Seafood where everyone ordered Campechana of all shrimp, all crab, or mixed.  I went with mixed.  Delicious!





After our brunch we headed to a middle eastern store The Phoenician for some shopping, then to the Asian store, then to get barbecue.  I'd like to say we didn't eat between the seafood and the barbecue but that would not be true.  After the barbecue it was back to Sharon's where Julie pulled out Chocolate Caramel Brownies.  We still had the previous desserts too.  As chefs we like to make sure no one is ever hungry.  

We snacked on desserts, talked around the outdoor fire, helped with business logo decisions and had a great time.  We were a little tired after all of our food adventures and it was a relaxed night. 

Sunday it was back to the airport and back to reality today.  I've had a productive day at the desk creating summer classes menus, confirming a library program and getting some laundry done.  I think it may be time to fold while having some tea.

More Surgery - Freezer to the Rescue!

If you've read this before, you know that I had eye surgery right before Thanksgiving.  I was recovering well, getting back to normal and then on January 28th I found out my retina was detaching again and I was having surgery again!

Surgery was 2/4 and so far so good.  I was face down again until today but the pain was less than last time so I don't have to check out with percocet.  Yay! 

My husband did take over cooking duties again but there were no major holidays like Thanksgiving that he needed to deal with. I planned a menu that was simple and took us through tomorrow but I'll be able to make dinner tonight.

So here is my surgery menu planning, I hope that I won't have to do it again, but it does work.  Surgery was Friday very early and I wasn't sure if I'd want to eat so Thursday's dinner was meatloaf, scalloped potatoes and spinach.  This allowed for good leftovers for my husband and I had purchased cheddar bunnies in case I needed them.  

Perfect plan.  Saturday he did not need to work so I planned a simple chicken pasta dish from Everyday Pasta.  Giada's cookbooks are easy to follow and tasty.  He made a delicious dinner.  The plan for Monday was leftover pasta and salad.

Sunday the plan was to roast chicken breasts and thighs and use some stuffing from the freezer.  There would be enough chicken for leftovers for lunch or dinner.  Easy to roast chicken pieces and heat stuffing.

Monday the plan didn't work so well.  Maybe it's the pain medication I was taking then and a little stress, but there weren't many leftovers.  Plan B was salad and some salmon fillets from the freezer.  Worked perfectly!

Tuesday we had chicken, stuffing, forage for yourself.   My husband worked from home Tuesday and went to his meeting Tuesday night.  Today is more normal.  Husband went to the office, I can eat cold chicken, baked gnocchi for dinner.

I do not do well letting people take care of me even when I have to and I know they want to.  I'm working on that.  We also have some nice beef stew from my friend Rosemary.  She also brought over some delicious whole wheat bread and dessert.  The bread and dessert went on Monday's meal.  

So I am fortunate that recovery is easier so far.  I have a follow-up appointment Friday and hope all is well.  

Happy Halloween

Wow, what a quick week!  I like to be busy and I was this week, but I also try to not be crazy.

Tuesday I cooked for my new customer and all went well.  Their cats still like me I think even though I locked them in the powder room while I loaded and unloaded the car.  I don't want anyone escaping! 

Wednesday I did not work so I made some dinner for our small group that night.  There are 4 couples that are meeting to discuss a book called Marriage Without Regrets.  Most everyone comes straight from work, so I thought food would be nice. 

I made a big salad based on an Eating Well recipe.  It had chicken, white beans, romaine, spinach, sun-dried tomatoes, fresh basil, celery, zucchini and feta.  Served it with a vinaigrette and some flaxseed crackers.  It was very good and light so we'd be ready for the pie.

For dessert I made peanut butter cream pie from Nancie McDermott's Southern Pies cookbook.  Very good!  So far I've made two pies and loved them.  I need to keep going. 

Thursday I cooked for a client and included some Pumpkin Chocolate Chip Muffins for autumn.  The recipe makes 24, so I baked one dozen for them, brought the rest of the batter home and made one dozen for us on Friday.  Very good, lots of chocolate. 

Pumpkin Chip Muffins from Taste of Home
makes 24

4 eggs
2 cups sugar
1 can solid-pack pumpkin (15 ounces)
1 1/2 cups canola oil
3 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups semisweet chocolate chips (12 ounces)

  1. In a large bowl, beat the eggs, sugar, pumpkin and oil until smooth.
  2. Combine the flour, baking soda, baking powder, cinnamon and salt; gradually add to pumpkin mixture and mix well. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full.
  3. Bake at 400° for 15-18 minutes or until a toothpick inserted near the center comes out clean. Cool in pan 10 minutes before removing to a wire rack.
Friday I did get some knitting done and went to Trader Joe's to get car food.  I'm driving to New Orleans for a few days and leaving Monday.  My friend Rosemary will be with me and we'll need car snacks!

My husband and I went out to dinner on Friday night and I wasn't impressed with the meal.  It was a steak house that I've heard raves about, but I really thought we could have had a better meal at home.  I was appreciative of the gift certificate that we used, but was surprised at how basic the food was.

I had crab cakes and mine are much, much tastier.  My husband had steak and he said it was good but the broccoli was rubbery.  We don't have rubbery broccoli at home and we spend much less on a comparable meal.  And we could have had guests for as much as we spent.  It was nice to have a meal out and nice that we had a gift certificate for the meal but also nice to learn that we won't go there again. 

Saturday I went to Macy's to spend some time working for KitchenAid.  I did take 2 muffins for Jon who works in housewares and made sure I had a table so I could demo the pasta press.

Once home I foraged in the refrigerator to make a quiche for dinner.  I had some sausage left from Thursday, some sun-dried tomatoes from Wednesday, some onion, cheese, basil, eggs, and milk.  I also threw in some ricotta I found in the fridge.

Today I am working a couple hours for KitchenAid and then tonight am meeting a friend for dinner.  She is flying in from California to do some work in Warner Robbins, so we'll meet for dinner.  I don't see her very often so that will be nice.

Lots of Family and Food

Last Thursday, after my morning interview, I headed north on 85 to Greenville SC for a baby shower.  My step-daughter is due in early December and was having a "Girls Night Out" shower.  She's having a girl and wants to start her off right! 

We had a good evening of food, friends and cute baby things, I stayed over with my other step-daughter and headed back south on 85 on Friday morning. 

I needed an easy dinner Friday since I wasn't sure when I'd get home, so I foraged in the freezer for chicken soup.  It was delicious, I finished it for lunch just now. 

Saturday I had some hours of work for KitchenAid and we went out for dinner to make things really easy. 

Sunday we went to church, bought a few groceries and headed north on 85 to a niece's wedding in NC.  The wedding was outside, the day was perfect and the food was wonderful.  I expected the food to be wonderful once we got there and discovered that the food was provided by The Purple Onion in Saluda.  My sister-in-law and brother-in-law (bride's parents) own The Purple Onion.

We had delicious appetizers, grilled vegetables, cheeses, crackers, breads.  We then had the main course - pork tenderloin, salmon, potatoes, macaroni and cheese, salad, rolls, green beans, probably more that I am forgetting.  Then of course the cake, or in this case chocolate or carrot cake cupcakes.  Very good! 

We stayed in either NC or SC last night and then it was south on 85 this morning. 

I've been working at my desk, getting ready for my Tuesday client, a client meeting Tuesday night, my Wednesday client and some reports for KitchenAid.

I unpacked while my soup heated and now I hear that laundry needs to be folded!  Life is good!

Cooking like Shakespeare and Apples

What a wonderful weekend!  My weekend actually was Sunday and Monday since my husband worked a lot on Friday and Saturday, and I worked a little on Saturday.

I have been cooking for us however and Saturday made another recipe from the newest issue of Cuisine at Home.  It was a recipe for 2 so no leftovers and it was excellent.  In order to give you the exact name of the recipe I would have to go downstairs and that's not happening now.  And the recipe is not online.  I'm telling you, you need to get this magazine.  Get a subscription, it's great.

Anyway, chicken breast was poached in broth with thyme.  Once that was done you added tomatillos, garlic and onion to the same saute pan.  That simmered some, then you mashed it, shredded the chicken and added the chicken to the sauce.  I then made individual casseroles layering cheese, chicken, corn tortillas (2 per dish) topped both with some red bell pepper, baked and then topped with fresh cilantro and the pickled red onions that I made too.   Delicious. 

Sunday we went to church, quick trip to the grocery store, home for breakfast, quick trip for me to do some work for KitchenAid and then we headed to Le Cordon Bleu to attend The Herbs of Shakespeare.  We listened to Geri Lauffer talk about how Shakespeare referenced herbs in his work and sometimes the double meanings of the herbs.

After the talk we sampled some dishes made from cookbooks from the 1600s.

For dinner Sunday I went pretty traditional with chicken and rice.  I had a recipe torn from a Donna Hay magazine that says Autumn.  No idea what year, I only have one page. I had to make some changes, I'll put my changes in parentheses.

Oven Risotto with Chicken and Fetta
serves 6

1 tablespoon olive oil
1 red onion, sliced
2 cloves garlic, crushed
1 1/2 tablespoons thyme leaves
2 cups arborio or carnaroli rice
4 cups chicken stock
1 tablespoon olive oil, extra
6 chicken breast fillets, trimmed
1/3 cup finely grated parmesan cheese
2 cups baby spinach leaves
5 1/4 ounce fetta cheese, crumbles

Heat a small frying pan over high heat.  Add the oil, onion, garlic and thyme and cook for 2 to 3 minutes.  Place in a 12 cup capacity ovenproof baking dish.  (I used Le Creuset, sauteed the onion, garlic in that.  Not using 2 pans.)  Add the rice and stock, cover with a lid or aluminum foil and cook for 40 to 45 minutes. (No, no oven temperature.  I looked for another oven risotto recipe, it said 425, I used that but I'd use 400 degrees the next time and it should take about 40 minutes.  I had to add some broth.) While the risotto is cooking, heat a medium non-stick frying pan over high heat.  (I used stainless steel.)  Add the extra oil and cook the chicken for 4 minutes on each side or until golden and cooked through.  (I cooked them in batches and sprinkled them with salt and pepper first.)  Set aside.  Remove the risotto from the oven and stir through the parmesan, spinach and fetta.  Serve the risotto with the chicken. 

I copied the recipe as written, in the paragraph style which I don't really like.  The dinner ended up to be pretty tasty and we have leftovers for tonight!

Today my husband took off work and we went to Jazzercise at 7:15.  Back home I did have some work to do for my new personal chef client tomorrow.  We then did some shopping at the outlets on 400 and then kept going to Amicalola Falls State Park and we had a picnic lunch.  Lots of rain this morning but it left while we were shopping. 



After lunch we headed to Ellijay to get our apples.  We ended up with 1/2 bushel of Jona Gold, 1/2 bushel of Golden Delicious and 1/2 bushel of Stayman at R and A Orchards.  And of course fried pies for dessert!  Friday is applesauce day at my house.  Lots of apples to make applesauce for the freezer.  I'll mix the three types together and add cinnamon and maybe a little sugar.  Maybe not. 

So now we are having a big storm but we're home safe and sound and can relax with the cats.  Such a good weekend!
