Vegetarian Saturday

I do my menu planning on Friday and plan the menus through the next Saturday.  Last week I had planned to have  vegetarian pasta and roasted red peppers on Friday but things changed.

Friday wasn't a bad day, I took my car for service, nothing was wrong, just maintenance so it didn't take too long. I went home, had some breakfast and then a killer headache hit.  

I looked at the recipes and could not even begin to understand how I could make them.  They weren't hard, my head just hurt a lot.  By dinner time my head was not throbbing but it didn't want to cook.  We went out to a neighborhood Mexican restaurant.  No margaritas.  The Friday menu was moved to Saturday which worked because I had left Saturday open.

Yesterday my head was normal.  I made biscuits and eggs for breakfast, did a thorough cleaning of the bedroom, moving all furniture and finding lots of cat toys under the dresser.  Had a relaxing rest of the day, looked at the recipes and they were perfect for yesterday.  

I started roasting the red peppers and while they were in the oven I prepped the ingredients for the pasta.  I had zucchini, onion, corn, fresh basil, fresh mint, grape tomatoes, lemon, garlic, oregano and pasta.  I also made the filling for the roasted peppers - goat cheese and chopped pistachios.  The original recipe called for walnuts, but walnuts are not a favorite nut.  

I used one of my newer cookbooks - The Meat Lover's Meatless Cookbook by Kim O'Donnel.  The cookbook is by season and all of the summer recipes so far have been good.  Last night was excellent.  In addition to the change of walnuts to pistachios, I changed the pasta from orzo to tiny bowties.  Everything was delicious.
