Springtime Cooking

It is not cold in Atlanta anymore!  In fact, we were in the 70s yesterday, hotter today and lots of sun.  Yesterday I had a day at home.  I did some computer work, compromised and cleaned until 11, then went to the deck with a book and Perrier and relaxed.  I had plans for dinner but my husband got home and said "why ruin your relaxing day, let's go out".  Who am I to argue?

Today I did leave the house to meet Abuna for lunch.  She is my co-leader on the local group for WCR (Women Chefs and Restaurateurs).  We needed to plan for events this year.  We are a little late, but she travels for business often, I've had the eye issues, it's hard to get together.  

We met at Tanaka in Roswell and had delicious sushi.  We did plan some things with dates and everything so we'll be getting that information out.  When I got home I had to do some printing to get ready for class tomorrow and couldn't enjoy the sun on the porch. 

Not to worry, the cats were thrown across the floor soaking it all up.  I disturbed them with my picture taking but they persevered and were able to keep sleeping after the photos. 





I met my neighbor for our walk.  She wants to take her dogs out more and I need to do something since I'm still not back to Jazzercise.  She takes the two big dogs and I get the little dog and off we go.  After walk we have a chat and some water at her house. Then back home for me to make dinner.  She is not making dinner, she says she is on strike with her family.  

Dinner was quick and easy tonight, carried over from last night.  When it gets warmer I like lighter meals and I wasn't in the meat mood.  I used Donna Hay's cookbook Cooking Off the Shelf and this was more of an idea than a recipe. It's good though. 

You put some water on to boil to cook linguine.  While that's happening you chop some hot red peppers, crush some garlic and shred some zucchini.  You saute the peppers and garlic in olive oil, throw in the zucchini for a couple minutes and toss it all together with some salt, pepper and parmesan.  My husband grated parmesan while I sauteed.  

And that's it.  We took our pasta out to the deck and listened to the birds and relaxed while the sun set.  Perfect dinner.
