Chefs Move to Schools Update

If you read this regularly, you know that in June I got to go to the White House for the kickoff of Chefs Move to Schools.  It is part of the Let's Move initiative started by Michelle Obama to help fight the increasing incidents of childhood obesity.  It was a very wonderful day with hundreds of chefs, speeches by Mrs Obama and the White House chef and just being involved in all the excitement.

Several weeks ago I went online where the USDA has created a map and matching tool for chefs and schools.  Since I do not have children I'm not involved regularly with a school so I wanted to find a school.  I found a middle school near me, sent an email to Maria and thought I'd have to wait until school started to hear.

Fortunately Maria is very excited about the program, we met, talked, kicked around some ideas and have stayed in contact.  School starts tomorrow so I should be able to go to school soon.  Maria is the head of the language department and she says the principal is very excited as is the science teacher and several other teachers.  This is going to be fun!

I also got some mail last week which was unexpected and very nice.  I got a letter from the White House!



Today I am attending a lecture titled The Iceman Goeth.  It's about the icebox, refrigerator and the history of all that.  Of course when asked to bring something I said "sure" and am taking an icebox cake.

Icebox Cake from Nabisco

  • 2 cups heavy whipping cream
  • 2 tablespoons confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 package (9 ounces) Nabisco Famous chocolate wafers
  • Chocolate curls, optional
  1. In a bowl, beat cream until soft peaks form. Add sugar and vanilla; beat until stiff. Spread heaping teaspoonfuls on the cookies. Make six stacks of cookies; turn stacks on edge and place on a serving platter, forming a 14-in.-long cake.
  2. Frost top and sides with remaining whipped cream. Garnish with chocolate curls if desired. Refrigerate for 4-6 hours before serving. Yield: 10-12 servings.
Now to fold laundry and read a little before I go and learn about the icebox.

I wish our schools would join up. Their menus are a fright. Oh well, thankfully my kids only choose to eat their meals once or twice per week. Sigh. I'm sure the kids at your school are going to be VERY lucky to have some good stuff coming their way!
